In late 2011, I was fortunate enough to spend some time exploring a small and wonderful part of Brazil. While visiting Terra Una, an eco-village built in the lush state of Minas Gerais, I was introduced to this stunning assembly of flavors — the Terra Una Temple: successive layers of zucchini, avocado, crushed almonds, sprouts, cracked red pepper, and a drizzle of honey.

While in Vietnam a few months ago, I was introduced to another delicious collection of flavors while dining in Hanoi — the Ly Club Five Elements: dried shrimp, lime, hot peppers, dried coconut, and peanuts, all rolled in a la lot (betel) leaf.
